Victorian cookery doesn't always have the best reputation today. Certainly Victorians were far less concerned about counting calories (though the technology for doing so did exist) or about "health foods." However, it's worth remembering that today's emphasis on healthy, natural cooking has arisen in direct response to the modern proliferation of prepackaged, prepared foods, fast foods and junk foods. Such items were unknown in Victorian days. A typical Victorian meal might be prepared with vegetables harvested from one's own kitchen garden, or purchased within the last couple of days at the greengrocer. Eggs might come from one's own poultry yard. Since refrigeration, though not unknown, was difficult to come by, one did the marketing on almost a daily basis, or arranged for the butcher's boy to come by with a delivery of fresh meat for that day's supper. That isn't to say that "bad" foods didn't exist, but most Victorian dishes were prepared from scratch with basic, fresh ingredients - which means quite a lot of Victorian foods were, in fact, good and good for you!
