For the conscientious Victorian housekeeper, late summer and early fall would be busy days in the kitchen. This is the time for laying away the supplies of jams, jellies, preserves, pickles and other treats that will be the household's primary source of fruit during the winter and spring months - indeed, until the next year's harvest! In the country, one might be converting the fruits of one's own garden to jams and jellies - but in the city one could buy fruits in quantity at the greengrocer for the same purpose.
